Banana Blueberry (or Choco Chip) Muffins (age 3+ baking)

This is so far my favourite and least guilt muffin recipe. Found this from the Looneyspoons collection. Twelve muffins contain 1/2 cup of oats, 1/4 cup of flex seeds, and only 1/4 cup of butter. I reduced the sugar portion as usual, and rewrote the recipe for my kids to follow independently. Fool-proof for a 3-year-old.

They forgot the butter in their first batch!!

Ingredient A:
1 cup rolled oats (not instant)
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1/3 cup sugar
1/4 ground flex seeds or wheatgerm
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt

Ingredient B:
1 1/2 mashed bananas (about 2-3 large bananas)
1/4 cup butter, melted
1 egg

Ingredient C:
1 cup blueberries or semi-sweet chocolate chips

How:
  1. Mix A and B separately in 2 separately bowls.
  2. Add B into A. Mix until everything is combined. Do not over mix the batter!
  3. Preheat oven to 380F.
  4. Gently fold C into the batter. Scope the batter into 12 muffin cups. Bake for 20 minutes. Cool completely on wire rack before storing them away in Ziploc or Tupperware. Good for freezing.
Notes:
- My oven is not as hot and has a rapid preheat function. So I use 380F and preheat it halfway. The original recipe calls for 375F.
Half blueberries and half choco chips.
