This super easy salad can be served as a side dish, a quick snack, or double up the portion as a light lunch.
Ingredients (one serving)
1 tomato
1 avocado
1/2 tsp soy sauce
wasabi to taste
toasted sesame seeds
Bonito shavings

How
- Dice tomato with skin on and seed in. Peel and dice avocado to similar size. Place both diced fruit in a serving bowl.
- In a separate small bowl, mix together the soy sauce and wasabi. Pour it over the diced fruit and mix well gently.
- Sprinkle as much sesame seeds and bonito shavings as you want over the salad. Serve immediately or chill in the fridge for no more than 1/2 hr before serving.
Here is how I pack this for lunch: pack the diced fruit in a Tupperware, pack the soy wasabi dressing in a small container, and pack the dry toppings in a separate container (sesame and bonito can be packed together). Assemble the salad right before serving and you save yourself a $15 IQ lunch!
