Butter Chicken Mussels

The baby two-pack mussels at Costco are our favorite. They are very tiny but very tender. They also don't have the "strings" attached which means less preparation time. I decided to try something different with the mussels last night instead of the regular pasta with white wine sauce. It was delicious and paired perfectly with naan bread.

Here is the Butter Chicken Mussels from my Kitchen:

Ingredients
1 pack of baby mussels (2.72 kg)
2/3 jar of butter chicken sauce (about 300 ml)
1 cup of broth or water
1 green bell peppers, diced
1 tomato, diced (preferably Roma tomato, then you will need 2, but I only had field tomatoes at home and they worked fine too)
a small bunch of fresh Italian parsley, stem removed and chopped

How

  1. Prepare the vegetable and herbs.
  2. Remove the mussels from the package and rinse them under cold water. If your are using bigger mussels, debeard them, i.e. remove the "string" from each of them.
  3. Add some oil in a heated big pan. Add green bell peppers and stir fry for 3 minutes on high heat.
  4. Add tomatoes and stir fry for another 1 minute.
  5. Add mussels and mix well.
  6. Add broth/water, then add butter chicken sauce and mix well.
  7. Bring everything to a boil and turn down the the heat to low. Simmer with lid on for 3 minutes (5 minutes if your mussels are bigger).
  8. Remove from heat and give it one last stir. Sprinkle with parsley and serve hot.


The baby mussels from Costco are small in size, but very tender and juicy.
