Oyster Pancakes

Don't freak out. This is not a breakfast dish. Just like crepes are not usually served as dessert.

I am pretty sure that I was born to love foods, as I fell in love with Oyster Pancakes at the first bite at age 7. This exotic pancake is loaded with strong flavorful ingredients that compliment each other so well. The traditional ones are made with baby oysters; however, those are not found here so I substituted them with regular oysters. Costco sometimes carries these oysters at a very good price.

Here are the Oyster Pancakes from my kitchen:

Ingredients
1 tub of oysters (473 ml)
a bunch of cilantro (coriander)
4 eggs, lightly beaten
vegetable oil
flour or corn starch
salt


How

  1. Gently empty out the oysters from the tub to a big bowl. Rinse the oysters with cold water. Be careful not to break the oysters. Drain out the water but left about 1/2 cup in the oysters.
  2. Add 2 tbs. of flour or corn starch into the oysters. Very gently mix them well. Set it aside for 15 minutes.
  3. After 15 minutes, gently rinse and rub each oyster under slow stream of cold water to remove the slime and the black stuff off the surface. Remove and discard the hard muscle part (accutor muscle) from each oyster. Place the oysters in a strainer to strain off the water and set aside.
  4. Boil up a pot of water. In goes the oysters and immediately turn off the heat. Let it sit for 3 minutes then drain off the water. Run cold water over the oysters to cool them down. Drain well. Cut them into small pieces and add into the eggs.

  5. Remove and discard the roots from the cilantro. Chop the stems and leaves. Add into the eggs.


  6. Add 1 tbs. of vegetable oil and 1 tsp. of salt into the egg mixture. Mix well.
  7. In a pan, heat up 1 tbs. of vegetable oil on high heat. When you start seeing smoke, pour in egg mixture just enough to fill the bottom of the pan. Gentle shake the pan to let the mixture set evenly on the pan. Turn the heat to low and cook for about 8 minutes. Check the bottom of the pancake every few minutes to make sure it is not burn.
  8. When the surface of the pancake is half cook, carefully flip the pancake over. If you don't have confident to do a perfect flip, check out the video below.
  9. Cook for another 8 minutes. Transfer the cooked pancake to a serving place. Repeat Step 6 - 9 until all the egg mixture is used up.
  10. Serve hot.
