Speedy Beef and Mushroom Stir- Fry

Mushrooms are perfect for stir-fry dishes if handled properly. The key for stir- frying mushrooms is to keep the heat high so that the mushrooms have no time to "sweat" and all the flavorful juice is locked in the mushrooms. 


Same theory applies to stir-frying meat. Do it on high heat and always pay attention to the sizzling sound. Salt should be added at the very end as adding salt too early may make the stir-fry watery.

Here is the beef and mushroom stir-fry from my kitchen:

Ingredients
1/2 lb. of beef, or any other meet, thinly sliced against the grain
1 pack of 8 oz. Enviro Mushrooms, thinly sliced
Minced garlic
Salt

Beef marinate
1 tbs. of Soy sauce
1 tsp. of Sugar
1 tsp. of Corn starch
1 tbs. of Vegetable oil
2 tbs. of Water

The portion of the mushrooms should be at least twice the portion of the meat, because the mushrooms will shrink significantly after they are cooked.

The mushrooms were pre-sliced but I sliced them thinner so that they cook faster. 



How

  1. First marinate the sliced beef: add soy sauce, sugar, corn starch and water into the sliced beef. Mix until all the liquid is soaked up. Add vegetable oil and mix well. Marinate for 10 - 15 minutes.
  2. Heat up a deep frying pan and add about  1 tsp. of vegetable oil. When you see smoke, add the beef and spread them out. Do not move the beef for 30 seconds or until you hear them sizzling. When sizzling, stir fry the beef until they are semi cook. Remove from the pan.
  3. In the same pan, add 1 tbs. of vegetable and add the mushrooms. Quickly stir them around so that they are evenly coated with oil. Add minced garlic and mix well.
  4. Continue to stir fry the mushrooms until they are shrunk at least half the size, about 5-8 minutes. The mushrooms should be sizzling at all time. If sizzling fades, turn up the heat. If the stove is already at high, spread the mushrooms evenly on the pan and do not move them until the sizzling is back again.
  5. Add the beef and any juice came out of the beef into the mushrooms. Stir for 3 minutes until the beef is cooked. Add salt to taste.
